Buttered up Haddock.


It’s still lent. It’s like, never ending. (I didn’t give in and have dominos pizza at the weekend, no Sir) If you’ve been better than me and actually kept to your healthy eating regime, then this buttered Haddock is on the right side of healthy and well away from bland, which you can sometimes find with fish dishes. This is also SO incredibly easy. A lifesaver if you’re desperate for a quick fix that doesn’t involve bunging chips in the oven or placing fish fingers in a sandwich. The important thing to remember is that if your fish is fresh and organic, it will taste a billion times better. It just tastes incredible. I used to be one of those people who thought it was all a scam, meat was meat, and I wasn’t going to pay through the nose for something I could buy for £1 in the special aisle. How wrong I was. If it’s fresh, the flavour is fresh. Fresh is best. Just ask Will Smith. The great thing about this dish is that it’s an explosion in your mouth, so you don’t actually NEED a lot of it. The fish is moist and melts in your mouth and the flavours of the sauce mix with the fresh lemon juice and give it a tangy sharpness that compliments the creamy butter. If you’ve decided to go all out healthy and you’re not having carbs (well done you) then just scrap the toast and have it on a bed of salad. It still tasted divine and the rocket gives it that peppery taste which just makes the entire thing wonderful. Buttered up Haddock with coriander, garlic and Boursin. (Makes 2 servings) Ingredients Needed: 2 fresh, organic fillets of Haddock (or Cod if you prefer) Fresh bread (to toast) 1 heaped tsp Boursin cheese (with or without garlic infused) 1 tbsp unsalted butter Rocket/Watercress/Spinach salad Fresh Coriander Chop/rip up a few fresh coriander leaves. Mix with the Boursin and the butter. Place the fillets into a piece of foil in a baking tray. Spread butter onto flesh side of the fillet. Close up the foil parcel and place into the oven for 20 minutes. Toast your bread and add the cooked fish. Place some salad on top and drizzle with the melted butter sauce, a drizzle of fresh lemon juice and salt and pepper to taste. You’re done.
