Sweet Potato and Beet Galette with Gorgonzola Cheese and Thyme



I made the mistake of clicking on a few HuffPo Parents articles the last few weeks and engaged in some discussions on their Facebook page. Now my entire Facebook feed is filled with pro breast feeding articles, working mom vs. stay at home mom, snarky parenting memes.... and a crap ton of "I Have Sex With My Husband Every Day" articles. I tend to gravitate towards the comment threads on those types of articles because sometimes they can be quite entertaining, other times they leave me feeling astounded at the asshats in the world. . Especially anything that has to do with marriage. I recently read this article, and I have to say I agree with the writer all the way. Does that mean I think everyone should have sex 7 days a week? Of course not. However I think it's a HUGE part of marriage and it plays a big roll in staying happy and healthy together. I guess I will never understand why when one person says "Hey I'm happy and I feel great about my relationship and this is why..." people have to become negative nellies and tear you down. If someone says they want to have sex with their spouse seven days a week, I say.... Power to you! Perhaps if you were having more of it, you'd be less of negative grump all the time.
Though we may not have sex every single day, the husband and I defiantly keep things fun and steamy. One of those things is very vanilla... and just a simple old at home date night. No phones, tv, work, and most importantly no kids (we put them to bed early!) Over the years it's become increasingly hard to get out and unwind just the two of us. So I started making it a point to make special chaos free at home dates for us. What better way to sit down for a date with my handsome husband than a home cooked meal made just for us.

Galettes are great and an easy yet impressive way to serve up dinner or dessert. This particular one consists of just a few basic ingredients and is packed with so much flavor.
Sweet Potato and Beet Galette with Gorgonzola Cheese and Thyme
Ingredients: 1 single pie crust 1 large sweet potato, washed, peeled and sliced thin 3 medium beets, washed, peeled and sliced thin 1/2 cup Gorgonzola cheese 2 tbs olive oil 1/2 tsp kosher salt 1 tbs fresh thyme(additional for garnish optional) Directions:
Preheat oven to 350.
Roll crust out into a circle that is about 1/8 of an inch thick. Arrange sliced beets and sweet potatoes in a circle, leaving 1 inch of crust to crimp. Fold and crimp access dough over the edges. Brush the entire galette with olive oil, sprinkle with salt, fresh thyme, and Gorgonzola cheese. Bake for about 30 minutes or until the crust is golden brown.
