Can a person ever have too many brownie or cookie recipes? I don't think so–I usually get excited and pronounce the latest one I've tried as my new favorite and possibly the best ever. So here goes with this one: it's my new favorite and possibly the best ever. Why exactly? They brownies moist and not too sweet (you could go up to two cups of sugar but I found it perfect around just one), a little fudgey (thanks to the broken up chocolate, don't forget to chop it!), and very cake-like (four eggs will do that). Plus, they take about five minutes to mix together–so you have no excuse to treat yourself or someone you love with a decadent dessert this Saturday night.

1 cup all-purpose flour
1 cup cocoa powder
Pinch of salt
3/4 cup olive oil
1 teaspoon vanilla
4 medium-sized eggs
1 to 2 cup(s) sugar, depending on taste
3/4 cup chocolate chips or 50 gram bar of chocolate, chopped
1. Preheat the oven to 320 degrees F. Line a 9-inch square baking dish with parchment paper. 2. In a large bowl, whisk together the flour, salt, and cocoa powder. Pour in oil , eggs, vanilla, and sugar, and stir until well combined. Fold in the chopped chocolate. 3. Pour the brownie batter into the baking dish and spread evenly. Bake for 45-50 minutes, or until a tester comes out clean. Allow the brownies to cool for 20 minutes. Top with powdered sugar and serve.
