The Weekend Dish: 8/22/2015

Happy weekend to you!

I hope you’re enjoying these waning days of summer… I find it so hard to believe that kids are already back to school in many places and we’re only two weeks from Labor Day. I’ve enjoyed another summer of mostly mild weather, but I’m always eager to usher in the cool fall days that call for hoodies, blankets and hot chocolate.

As always, you’ll find a recap of what was posted to the site this week, the most shared recipes, my Sunday dinner menu, and recipes I’ve bookmarked from other blogs. Enjoy!

On Brown Eyed Baker This Week

Strawberry Pretzel Salad – The nostalgic dessert that is nothing like a salad, but the very best of sweet and salty combinations!

Zucchini & Orange Marmalade Muffins with Cranberries and Pecans – These muffins have been a breakfast favorite this week – bright flavors and lots of texture.

Fudgy Pudgy Brownies – These have catapulted onto the short list of my very favorite brownies recipe – they are fabulous!

No-Bake Mango-Coconut Cheesecake – An easy, Paleo-friendly no-bake cheesecake topped with ribbons of mango.

Friday Things – News, podcasts, videos, makeup and more…

What I Bookmarked This Week

Recipes and posts from other blogs that I thought looked especially delicious and that I thought you would like, too:

Chili Cheese Hasselback Potatoes (Real Food by Dad)
Not only do these potatoes look fantastic, but they have me totally in the mood for fall food.

Crispy Shrimp Tacos (Taste and Tell)
And now I’m craving fish tacos at the beach! Love crispy shrimp!

Hatch Chile and Chipotle Salsa (Foodness Gracious)
My local grocery store is going to be roasting hatch chiles this weekend and next weekend; I need to pick up a batch just for this salsa!

Lime Soufflé with Toasted Meringue (Sprinkle Bakes)
This soufflé is almost too pretty to eat… almost!

Piña Colada Cupcakes (Bakers Royale)
Nothing screams summer like a piña colada, and these look absolutely gorgeous.

Have a delicious weekend!
