I love eggs, especially egg salad and deviled eggs. But those treats require hard-boiled eggs. Which requires something I loathe: peeling hard-boiled eggs. Over the years I’ve tried all kinds of methods. Boiling them is hit or miss. Adding a big of vinegar or baking soda to the water was still hit or miss. Baking them in the muffin tin left them slightly easier to peel but it also burned the bottoms and left ugly brown spots.

“Old” eggs do seem to peel better than new eggs for the methods mentioned above but with the method I’ve been testing lately, the new eggs peeled just as well as the old eggs. Score!

So what’s the secret?

Steam them.

Told you it’s simple!

Here’s what I use:

To make the eggs:

  1. Place the steamer basket in the bottom of a large pot. Add water just to bottom of steamer basket.
  2. Place eggs and egg times in basket.
  3. Cover pot loosely with a lid.
  4. Bring to a boil over medium to medium-high heat. (I find boiling the water on high makes some eggs burst.)
  5. Steam eggs until the egg timer shows done (it gradually turns all dark red).
  6. Remove eggs and carefully transfer to an ice bath.
  7. Peel when cool enough to handle or store in fridge until ready to eat!

Look!! Hard boiled peeled eggs are a pretty enough to turn into Deviled Eggs!
