Are you a fireworks person?

Once you get past Memorial Day here in the south, you’re officially entering into fireworks season.

It’s hard for me to imagine that some of you live in places where you can’t buy fireworks. How is that even real life? I’ve lived in Arkansas for over 20 years now, and I’ve gotten so used to the abundance of fireworks stands that set up shop every year at around the end of June.

Most stands sell both firecrackers and fireworks.

And although I love fireworks as much as the next girl, I don’t understand the point of firecrackers. They make lots of noise and smoke and scare the love right out of people, but that’s about it. No pretty sparkles, no shimmering lights, nothing. It’s redneckery at its finest. And trust me when I say that you only THINK you’ve seen rednecks until you’ve visited Arkansas around the 4th of July. Our people love nothing more than loud noises, cold cheap beer, and kiddie pools.

Which can be either awesome or terrifying, depending on the company. It could go either way in this fine state. Trust me on that.

Red, White and Blue Whoopie Pies

When it comes to celebrating the Fourth, I like to keep things a bit tamer. Swirl some sparklers around, eat a hot dog, watch the fireworks put on by the city (AKA professionals) and later indulge in an appropriately-themed treat. These Red, White and Blue Whoopie Pies? As wild and crazy as I’ll get. The Red, White and Blue Whoopie Pies use cake mix and are filled with a fluffy marshmallow frosting. These are guaranteed to be a hit for everyone, from kids to grandparents.

How to make Red, White and Blue Whoopie Pies

-I started with a funfetti cake mix, because funfetti makes everything better. I divided my batter in half and tinted one bowl red and one bowl blue. My favorite gel food colorings are these and these!

-I used a small cookie scoop to evenly measure and scoop out even circles onto a parchment lined baking sheet. Bake for 6-8 minutes, until the tops spring back. Remove to a wire rack to cool completely.

-To make the marshmallow frosting, whisk egg whites and sugar in a clean metal bowl over a pot of simmering water. It will form a smooth syrup. Make sure all the sugar dissolves.

-Using a mixer fitted with the whisk attachment, beat until stiff peaks form. This should take about 5 minutes.

-Once your frosting is done, and your cakes are cool, spoon or pipe the frosting onto one flat side of a cake, and sandwich with another cake. That’s it!

They are so delicious and festive! Enjoy.

Red White and Blue Whoopee Pies

Red, white, and blue whoopee pies are an adorably patriotic treat for this Independence Day. Bring out a platter of these at your barbecue!

For the cookies

  • 1 box Pillsbury Spring Funfetti Cake Mix (or normal Funfetti flavor )
  • 1/3 cup water
  • 1/2 cup vegetable oil
  • 3 large eggs
  • Red food coloring
  • Blue food coloring

For the frosting

  • 5 large eggs
  • 1 1/2 cups granulated sugar
  • 1 tsp pure vanilla extract

For the cookies

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.

  2. Mix cake mix, eggs, water and oil in a large mixing bowl on medium speed until fully combined. Divide batter in half. Color half of the batter red and the other half blue.

  3. Drop batter using a small cookie scoop on prepared baking sheet and bake for about 6-8 minutes or until tops spring back when lightly touched.

  4. Remove to a wire baking sheet to cool.

For the marshmallow frosting

  1. In a large CLEAN (grease free) metal mixing bowl, whisk egg whites and sugar over a pot of simmering water. Continue simmering the water and whisking the mixture until the sugar melts and it forms a smooth syrup, about 5 -7 minutes.

  2. Once you have a thick, smooth syrup, remove from heat and place bowl on your mixer. Using the whisk attachment, beat on low speed for 5 minutes. Add your vanilla and increase mixer speed to high and beat for five minutes more. The frosting should form stiff peaks.

  3. Using a spoon or a reseal-able bag with the corner snipped off, place a pile of frosting on the flat side of each red cookie. Top with the flat side of a blue cookie.
