Chicken Tacos

One of my go to dinners for entertaining is tacos. They’re universally liked & unbelievably easy. Everything but the meat can be prepped in advance {nap time!}. I almost always serve them in taco bar style which saves time & allows guests to customize, which for this picky eater, is key!

The essentials for hosting a memorable taco night are fresh ingredients & juicy meat. Fresh cilantro, cheese grated from a block & some caramelized onions are almost always on my taco bars. Other favorite ingredients include limes, guac, & salsa. See how juicy that chicken is?

I’m selective when it comes to chicken, especially in Mexican cuisine. It seems everyone has their preference of chunky or shredded. I prefer cubes, but either way you slice it these chicken tacos are ah-mazing & only takes 3 minutes hands on time!

Ingredients
  • red pepper or taco seasoning
  • olive oil
  • chicken breasts

Instructions
  1. Preheat oven to 400 degrees.
  2. Lightly coat chicken in olive oil & sprinkle with your seasoning of choice.
  3. Bake 20 minutes, remove from oven & allow to rest 5-10 minutes {it will continue cooking} before slicing, cubing or shredding.
