I think this might be my first recipe post. I know its my first vegan recipe post. I got the idea from Jordan over at
Berlin by the Bay. I always have lots of quinoa left over, so her recipe for kale quinoa bars inspired me to make some dessert quinoa bars... I just adapted the recipe to include . I'm not vegan, but I have been eating extremely healthy. Anyway, these quinoa bars are very easy to make, and you could substitute fruit for the carob chips, add whatever you like... Enjoy.
1 cup cooked quinoa
1/2 cup organic oats
1/2 cup whole wheat flour (you could try gluten free)
1/3 cup almond butter
1/2 mashed banana (or 1/2 cup applesauce)
1 tablespoon agave nectar
1 teaspoon baking soda
1/2 teaspoon organic vanilla
1/2 cup vegan carob chips
Combine all ingredients in a bowl. They should become sticky and a somewhat thick consistency. Spread into a thin layer in a greased baking dish. Bake 20 minutes at 375, or until golden brown on the edges/top. Let cool, then cut and remove with a spatula.
This makes about 12-16 bars, with about 100 calories in each.
