Welcome the spring with colorful nutritious dishes using unique type of potatoes

Spring brings along with warm weather; green trees and fresh blooming flowers, which means that more time is spent outdoors in the beautiful nature. So why can’t we welcome the spring in style by bringing to the dinner table some new recipes involving potatoes, recipes that are healthy and light?

Potatoes are a favorite for family dishes and they are not just delicious but also healthy. One medium sized which has not been peeled, containing just 110 calories, can give you about half the dose of daily vitamin C that you need and potassium more than a banana. These are reasons enough apart from others for you to include potatoes in your dinner and you can do it in a variety of ways. Eat delicious and keep healthy this spring with potatoes.

Katie Cavuto Boyle, who appears in the US Potato Board’s educational video series “Seven Potato Types”, is a chef and a Registered Dietitian and shares with us her brand new recipes of potato salad, recipes that are just perfect for this spring.

This show will feature seven unique types of potatoes that include reds, whites, yellows, russets, purples, petites and fingerlings. With these seven different types of potatoes you can cook yourself a new dish with a type of potato each night, all week long.
