Single Serving Dairy-Free Ice "Cream" Cake


I love making single-serve items. It's the perfect way to freeze items for later! These delicious ice "cream" cakes are no exception. They are dairy-free, soy-free, egg-free, wheat-free, gluten-free, nut-free, top8free, vegan, and so much healthier than the traditional ice cream cakes.

Because I'm a girl who likes a little variety, I decided to make four different flavors and have a taste test with the fam to decide which was best. We have the Strawberry Chocolate Chip one shown above, Vanilla Peach, SunButter Chocolate, and Chocolate Chocolate Chip (because you can never have too much chocolate, am I right?).

It didn't come to much of a surprise when the voting came to a tie; 2 for SunButter Chocolate and 2 for Strawberry Chocolate Chip. Luckily I made enough to freeze for later, which came in handy for birthday parties, dessert time, and special after-school snacks on warm days.

Single Serving Dairy-Free Ice "Cream" Cake

Ingredients:
  • 4 bananas
  • 2 cups milk (I used Rice Milk)
  • Flavor Enhancers: Pureed Strawberries, Canned Peaches, SunButter SunFlower Seed Spread, Chocolate Syrup, and Chocolate Chips
  • 1 pkg including ingredients needed for your favorite cake mix (I used King Arthur Gluten-Free Cake Mix and EnerG Egg Replacer in place of eggs, oil in place of butter, and rice milk)

Directions:
  1. Following the directions on the box, preheat oven and prepare cake mix as instructed.
  2. Using muffin liners pour a VERY SMALL amount of cake mix into the bottom of each liner.
  3. Watching carefully bake each muffin for approx. 20-25 minutes, and allow to cool completely.
  4. In a blender, blend bananas, rice milk, and flavors of your choosing and pour into each muffin cup.
  5. Add toppings and place in freezer until firm.
