ZUCCHINI CASSEROLE...TALK ABOUT GOOD!




What makes a good southern casserole? Perhaps it's all the love we southern gals put into our recipes! Or....perhaps it the soup and sour cream! This casserole is simply divine! I have served this to VIP guests, potlucks and holiday dinners. I have made this casserole and dined on it for lunch and also for dinner! It's too wonderful for words!


BEST EVER SOUTHERN ZUCCHINI CASSEROLE 4 fresh zucchini 3 fresh yellow squash 1 sweet onion, diced 4 grated carrots 1 cup cheddar cheese, grated 1 cup sour cream 2 cans Cream of Chicken Soup Salt and Pepper to taste 1/2 cup melted butter 1 package of Stove Top Stuffing Mix
Preheat your oven to 350 degrees F. Spray a baking dish with cooking spray.Do not peel the zucchini, just slice. Peel the yellow squash and slice. In a saucepan, boil the zucchini, squash and onion for a short time, perhaps five minutes. Drain.
Layer sliced zucchini, yellow squash, shredded fresh carrots and onion in the baking dish. Mix together the soup, sour cream, Season the veggies with salt and pepper. Spread the soup/sour cream mixture over the veggies. Top with cheddar cheese. Spread dry stuffing mix over the top of the casserole and drizzle with melted butter. Bake for 30-35 minutes.
