Ah Summertime, how I’ve missed you so. I think it’s finally coming to visit for awhile. To me, summertime means playing outside, watching my grandkids play in the sprinklers, eating lots and lots of strawberries and ice cream of so many different kinds. I am so excited to have found these amazing Snickers® Ice Cream Bars. They are so yummy! I decided to come up with a great dessert, Snickers® Short Cake! You will love it!! You really have to try it.

This past week we had a minute of sunshine, so we decided to have a little backyard fun. I had taken a trip to my local Walmart to pick up some supplies. I found this fun wiggle sprinkler to hook up to the hose and they had lots of fun with it.

The oldest grandson decided it would be a fun time to take some of the wiggler ends and shoot everyone in site with water. Some of us were happier about that than others.

This little lady was really great to run around the edges of the sprinkler, but she was having none of the water on her body. We get our water from an aquifer and it’s pretty cold, so I totally get it.

When I was walking around Walmart looking for some snacks, I gravitated to the ice cream section because, you know, that’s what you have in the summertime, ice cream. I found the Snickers Ice Cream Bars and picked those right up. I thought the adults would love them, because I love Snickers.

They were right next to the “Novelty” sign in the ice cream aisle.

I also picked up some M&M Ice Cream Cookies®, because I had never had them before and they looked interesting. And because no party is complete without candy, I picked up a family size bag of plain and peanut M & M’s® and some Skittles®.

Here’s an M & M’s secret about me. When I drive somewhere a long distance, like anything over about an hour, so not always a long distance, I take Peanut M & M’s and suck on them to keep myself alert. It really works too, or at least that’s what I tell myself.

It started raining after a little bit outside, so we came in and made a craft with our Skittles. We all had fun with it too. You just need a large piece of foam board, cut into one piece for each person, a bottle of glue, a pencil and the Skittles. Draw a shape on your foam board and outline it with glue, a little at a time or the glue will dry before you have time to use it. Then add the Skittles to the glue lines that you’ve drawn. Super easy and everyone has fun!! Be sure to eat a few while you’re creating.

My son-in-law was working on some lawn equipment for me, because I can’t figure out how to run the stuff, so I rewarded him with a Snickers Ice Cream Bar. He looks like he’s really enjoying it, doesn’t it? He’s a nice kid. He mowed my whole lawn for me.

Now, back to this Snickers Short Cake. I was thinking about what I wanted to make with these fantastic Snickers Ice Cream Bars and I knew I wanted to include strawberries, because that’s my favorite fruit. I decided I wanted to pure strawberry syrup too, so I made it and oh boy, I’m lovin’ this. I will be making it again and again.

Serves: 2 servings
An amazingly refreshing summer dessert, made with Snickers Ice Cream Bars.
Ingredients
  • 1½ cup strawberries, divided
  • 2 Snickers Ice Cream Bars
  • 3 slices of pound cake
  • whipped cream topping

Instructions
  1. In a blender, blend 1 cup of strawberries until they are smooth.
  2. Chop the pound cake into small, square pieces.
  3. Chop the remaining ½ cup strawberries into small pieces.
  4. Chop the Snickers Ice Cream Bars into small squares.
  5. In 2 -1 cup parfait dishes, layer half of the cake, strawberries and Snickers Ice Cream Bars.
  6. Drizzle ¼th of the strawberry syrup over each dish.
  7. Repeat layers, leaving 2 squares of Snickers Ice Cream Bars out.
  8. Top with whipped cream.
  9. Add the squares of Snickers Ice Cream Bars to the very top.
  10. Serve immediately.
