Berry Cobbler ~ GF, Dairy Free and Sugar Free (E or S)

Spring is in the air and the berries are becoming ripe for the pickin’! Actually, in Ohio we about skipped Spring this year and went from winter to summer. We are hanging out in the 80’s this week, but I’m not complaining. It’s been lovely outside. The windows open and the bird’s beautiful singing is soothing to my soul.

Last night I was making our dinner and decided to make dessert too. I don’t make desserts all the time, but here and there a craving strikes! I’ll blame my mother-in-law who got some Blackberry Cobbler at Cracker Barrel for her birthday. That got me wanting to make some I could enjoy at home too. Trim Healthy Mama Baking Blend to the rescue!

Ingredients:

  • 3 cups of mixed berries (I used equal parts of blueberries, strawberries and raspberries.)
  • 1 Tbs of coconut oil (soft) or butter(soft) if you can have dairy
  • 1 cup, packed of THM Baking Blend
  • 1/2 cup egg whites
  • 1 tsp baking powder
  • pinch of salt
  • 4 1/2 tsp of THM Sweet Blend (2 tsp mixed into the berries, 2 1/2 tsp in the dough) or double for Truvia.
  • 3 Tbs of Unsweetened Applesauce or 0% Greek yogurt
  • 1/2 tsp butter extract (I like this since I can’t use butter in mine)
  • 1/4 cup Old Fashioned Oats

Directions:

Pre-heat the oven to 350. Add 3 cups of berries to the pan. (You could do 4 cups if you can fit it in the pan.) You can use blackberries as well. I sprinkled 2 tsp of Sweet Blend over the berries and mixed it throughout. In a bowl, I mixed together the Baking Blend, coconut oil, egg whites, baking powder, salt, 2 1/2 tsp of Sweet Blend, applesauce, extract and Oats. I then dotted the top of the fruit with the mixture. I’ll post a picture of what it looked like before I baked it. I then baked it for 20 minutes uncovered, placed foil on top so it wouldn’t brown too much and baked an additional 10 minutes until I could see the fruit bubbling in the dish. This serves 4.

For an E:

Use other fruits that are higher in carbs like peaches or apples. This would make a lovely apple crumble type recipe. I’d probably enjoy cherries too! So many fun ideas are coming to mind. Of course you could eat this after an E dinner with just the berries and it will fit just fine since it’s a FP.

Yes, this is a FP recipe, but it’s at the tippy top area in carbs. I know some may want to use this in a S setting and may do okay with it. It may get into the S Helper area if you eat it after an S meal. I don’t sit and count out each thing, I just keep them in categories. It’s truly my approach and much more freeing to me than micro-managing each meal. That’s not food freedom to me! So, you make a personal choice when it comes to the S setting and how you do with it.

If this is your breakfast or snack, be sure to use some lean protein with it! A yummy Protein Shake is always my go as a Dairy Free girl. If you can have dairy, this would be yummy with some 0% Greek yogurt that has been sweetened with THM Plan approved sweeteners and some vanilla.
