Move over classic potato salad; there's a new dish in town. This Bacon and Blue Cheese Potato Salad is a fresh and flavorful take on the classic recipe. In fact, I'd take this over the classic recipe any day!

Over the past month, I've been doing some behind-the-scenes work to clean-up and organize the recipes and blog posts here on Inspired by Charm. One thing I noticed was that I didn't have a good potato salad recipe. Why? Well, to be quite honest, I really don't like potato salad. Well, that was until I made this Bacon and Blue Cheese Potato Salad.

My problem with most potato salads is that they are really heavy and can often be pretty bland. That's not the case with this recipe. Thanks to a lighter dressing, chunks of blue cheese and bacon, and a sprinkle of fresh green onions, this is a potato salad recipe I can get behind.

How to make Bacon and Blue Cheese Potato Salad

Once your bacon is cooked and cooled, crumble and set aside. For your convenience, there is a full ingredient list and detailed instructions in the printable recipe card below.

While your bacon cooks, bring a large pot of water to a boil. Once boiling, add the potatoes and cook until tender. Depending on the size of your potatoes, this will take 15-20 minutes. Drain, cool, and cut your potatoes into 1-inch chunks.

To a large bowl add the potatoes, bacon, green onion, and blue cheese.

In a small bowl, whisk together the white vinegar, sugar, black pepper, and salt. Drizzle this on top of your potato mixture. Toss with a large spoon or spatula to combine.

Chill for at least 1-2 hours before serving. And for those that are wondering ... yes, this can be made 24-hours in advance and chilled in an airtight container.

As you can see, this Bacon and Blue Cheese Potato Salad is so easy to make. I also love that you don't have to peel the potatoes. Not only does it save time, but I think it adds such a nice color, texture, and flavor.

  • 5 slices bacon
  • 2 pounds unpeeled new red potatoes
  • 1/4 cup olive oil
  • 3 tablespoons white vinegar
  • 2 teaspoons sugar
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup chopped green onions (about 5-6 green onions)
  • 1/2 cup crumbled blue cheese
