I don't know about you, but I'm preparing for a couple months of craziness. With two work trips, going back home for Mother's Day, and other exciting things on the horizon, I anticipate that May and June will be non-stop busy. Thankfully, most of the days are likely to be fun-filled.
I know I've said this times lately, but thank you so much for putting up with the plethora of recipe posts these past few weeks. Because I'm working on finding a new home, I have resisted spending big bucks or making a lot of significant design changes here in my apartment. Instead, I'm trying to save and plan for what's to come.

Anywho, with summer on our heels, I thought you might welcome a delicious go-to summer dessert recipe. I love recipes like this because you can whip them up quickly if you need a last-minute treat for unexpected guests.
I especially like this recipe because it takes something basic and makes it feel special. Instead of serving a standard dessert, it's more like a build-your-own-cheesecake on a strawberry. It's different and delicious!
This recipe is perfect for serving strawberries because together the flavors mimic strawberry cheesecake. However, you could use any kind of fruit. (If you're serving a variety of fruits, though, I recommend my Easy Fruit Dip recipe.)
Cheesecake Dip with Strawberries:
To serve, set two bowls on a plate. Fill one bowl with the cheesecake dip and the other with graham cracker crumbs. Pile strawberries on the plate, and it's ready.
To eat, dip the strawberries into the cheesecake dip and then into the graham cracker crumbs.
Fun and extremely tasty!
