It has been a hot minute since we've made a breakfast casserole here on Inspired by Charm. I don't know about you, but I'm a big fan of breakfast casseroles, especially when you can prep them the night before. I mean, who wants to get up and prepare a full breakfast in the morning? Not me!
Today, I'm taking one of my favorite breakfast casseroles and giving it a twist; it is getting a flavor upgrade by using everything bagels. I have been making this particular breakfast casserole for years. I always used standard white bread in times past, but this time I wanted to try something different and I'm so glad that I did!
Let me tell you, friends, I loved this recipe before but adding everything bagels is a game-changer.
I assume that any brand of everything bagels will work, but I used and recommend Dave's Killer Bread Epic Everything Bagels for this recipe. Their flavor and softness are perfect in this dish.

How to Make Overnight Everything Bagel Breakfast Casserole:
Begin by cutting the bagels into 1/2 - 1 inch cubes. Spray the bottom of a 9x13 baking dish with cooking spray, then add in the cubed bagel pieces. As I mentioned above, I used and recommend Dave's Killer Bread Epic Everything Bagels for this recipe. Their flavor and softness work really well for this dish.
Spread the cooked sausage over the bagels. Then, sprinkle with the cheese, chopped red bell pepper, and green onions. Mix slightly with your hands to combine. I've provided a full list of the ingredients and detailed recipe instructions in a printable recipe card below.
In a large bowl, add the eggs, half and half, dry mustard, salt, and pepper. Whisk to combine. Pour this mixture over the bagels and sausage.
Cover the dish with foil and refrigerate for 8 hours or overnight.
Before baking, preheat your oven to 350 degrees F.
Bake covered until set and lightly golden on top: about 60 minutes. (You can remove the foil for the last 10 minutes of baking for a nice golden top.) Remove from the oven and allow the casserole to set for about 15 minutes before serving. Sprinkle with chopped green onions to garnish.

- 2 1/2 cups half and half
- 1 1/2 teaspoons dry mustard
