Hot Chili Cheese Dip

This Homemade Hot Chili Cheese Dip is a cold-weather party essential. Made with chili, cheese, salsa, and a few other flavorful ingredients, this appetizer dip is quick to assemble and feeds a hungry crowd. I suspect everyone will be asking for the recipe.

Hot Chili Cheese Dip Recipe:

I've said this before and I'll say it again, I could make a meal out of dips. (Fun fact: Several years ago my friends and I had a dip party where we only served dips and it was EVERYTHING.) By the way, I have a collection of dip recipes HERE that I'm sure you'll love. This Hot Chili Cheese Dip, which would make the perfect addition to any party, will have to be added to this collection!

Side note: Part of me didn't want to post this recipe because of how lackluster the dish looks. (I clearly need to work on my slow cooker dip photography skills.) However, with that being said, this dip is so tasty and insanely easy to make that I definitely had to share it. You'll just have to excuse my photographs/presentation and trust the deliciousness.

I'd say this dip is more chili forward than cheese forward. However, I think the balance of flavors and ingredients is darn near perfect. The resulting dip will leave you craving multiple bites. Once you start, you won't be able to stop. You've been warned.

  1. Sauté the chopped onion in olive oil until translucent and tender.
  2. Add the garlic and cook for an additional minute.
  3. Transfer the cooked onions and garlic to a 3-quart slow cooker.
  4. Add in the chili, salsa, cream cheese, shredded cheese, and olives.

  1. Cover and cook on low for 2-3 hours.
  2. Stir frequently while cooking.

  1. Garnish with sliced green onions.
  2. Serve with tortilla chips.

Recipe Notes:

You can use whatever chili you like best, even homemade. I recommend chili without beans, but chili with beans would work fine, too.

The same goes for the salsa: Use your favorite. I used a somewhat standard jarred tomato salsa with medium heat. It was perfect.

  • 1 onion (finely chopped)
  • 2 teaspoons extra virgin olive oil
  • 2 garlic cloves (minced)
  • 2 cans (15 ounces each chili without beans)
  • 2 cups salsa
  • 1 1/2 blocks (12 ounces total cream cheese)
  • 2 cups shredded cheese (I used a mix of pepper jack and sharp cheddar)
  • 2 cans (2 1/2 ounces each sliced ripe/black olives, drained)
  • tortilla chips for serving
