Strawberry Coconut Margaritas
Happy Monday, friends! I’m kicking off this week with a bang! Well, more like a splash because today I’m showing you how to make Strawberry Coconut Margaritas.
With the weather warming up (and Cinco de Mayo just days away), several of my blogger friends and I thought it would be great fun to create a little blog tour inspired by two of our favorite things: Tacos and Margaritas!
Since I just shared Sriracha Chicken Tacos last week, I decided to take one for the team (LOL) and blend up frozen margaritas. I’ll walk you through my recipe first. Then you can check out all of the others in the tour at the end of this post.
As I’ve told you, I love me some coconut, so I decided to make coconut margaritas. What’s especially nice about these is that they’re sort of a cross between a margarita and a piña colada. Who wouldn’t love that? To give them a summer twist, I threw in a handful of fresh strawberries for delicious berry flavor and a beautiful pink color. I think they are calling it millennial pink these days. Does that make me trendy?
Trendy or not, these libations are the perfect way to sweeten up your fiesta. They’re also just the thing to cool you down as you kick back on a summer or spring afternoon on the porch. Grab your blender and let’s make a few!
Makes 4 cocktails
Here's what you will need:
1 (15-ounce) can Cream of Coconut
1 cup tequila
1/4 cup orange liqueur or Triple Sec
1/4 cup fresh lime juice
1 1/2 cups ice
2/3 cup fresh strawberries, halved
1/4 cup toasted coconut
Honey or lime wedge
Fresh strawberries and lime slices for garnish
Begin by preparing your glasses. Add the toasted coconut to a small plate. Rim each glass first with a bit of honey or the wedge of a lime; then dip the rim of the glass into the toasted coconut to coat. Set aside.
In a blender, add the cream of coconut, tequila, orange liqueur, lime juice, ice, and fresh strawberries. Blend until smooth.
Pour into your prepared glasses. Garnish with a fresh strawberry or slice of lime or both.

You’ve got to love a frozen cocktail. Everything gets buzzed around in a blender and voila, it’s ready to go.
