no-bake apricot almond (fruit & nut) granola bars


You guys. This recipe is easy and delicious. It’s a homemade breakfast on the go. I was sold at first bite.

It started because I had some spare apricots lying around and this was the perfect excuse to put them to good use. I wrapped these bars up individually and now we have breakfast to enjoy all week! Simply grab go each morning for a healthy and energy-packed start to the day. This recipe is also gluten free and vegan (depending on if you consider honey vegan or not…).

No-Bake Apricot Almond Granola Bars
(gluten free; vegan; makes 12-16 bars)

Ingredients

  • 1/2 cup almond butter
  • 1/2 cup honey
  • 2 cups oatmeal
  • 1/2 cup almonds, coarsely chopped
  • 1/2 cup dried apricots, chopped into small pieces
  • 1/4 teaspoon salt
  • Coconut oil to grease the pan


Directions

  1. Put almond butter and honey in a small saucepan over medium heat for 2 to 3 minutes or until they melt together; whisk to combine.
  2. Chop almonds and apricots and place in a bowl with oatmeal and salt. Add the mixture of almond butter and honey; stir well to combine.
  3. Grease a square baking dish with a bit of coconut oil. Spread the granola mixture evenly into the dish, pressing it into place. Cover with plastic wrap and refrigerate until set, about one hour. Once set, remove by peeling off the plastic and cut the bars to any size you like. Wrap bars individually for added convenience.

You could really use any nut butter or dried fruit and these would be delicious. I can’t wait to try more combinations! It was so easy for such a delicious result. I hope you enjoy!
