Chopped BLT Salad






Knowing that you should avoid certain food is different from not wanting a certain food.
For instance, I don’t want escargots because I don’t really like escargots.
But I avoid eating at fast food restaurants, not because I don’t want to, but because I want to be healthy.
Makes sense?





The brain however, is a very strong thing.
You can try all the tricks possible but every once in a while it just doesn’t quit.
Yesterday I wanted a BLT sandwich. Really wanted one.
I was about to go to the Deli down the street, where they make this mean BLT sandwich.
Mean as made with tons of bacon, heaps of mayo, some slices of sub-par tomatoes, and a few flakes of what looks like lettuce, but sure doesn't taste like lettuce.





Instead, I did the most logical thing I could think of.
I made myself a BLT, without the bread, plus some other yummy ingredients, in salad form.
Lo and behold, my craving was satisfied.





Lettuce that tastes like lettuce, tomatoes that taste like tomatoes, organic center-cut bacon, avocado, cucumber, and even some feta cheese.
I just patted myself on the back for work well done.
If you are a BLT lover and a salad lover, then you will love this BLT Chopped Salad.
Otherwise just get yourself a regular BLT, I won’t judge you.

Ingredients
Serves 4

8 cups chopped Romaine lettuce
1 large avocado, peeled, pitted, and diced
2 cups cherry tomatoes, halved
12 slices lean center cut bacon
1 cucumber, diced
6 ounces feta, crumbled

3 tablespoons olive oil
1 lime, juiced
¼ teaspoon salt
¼ teaspoon pepper

Directions

Place the bacon in a large skillet and heat over medium heat. Cook the bacon until crisp, browned, and most of the fat has rendered, about 4 to 6 minutes. Using a slotted spoon, transfer the bacon to a plate lined with paper towels to drain.
Chop the bacon and set aside.
In a large bowl (or in 4 single bowls) combine lettuce, cherry tomatoes, cucumber, and avocado. Add in salt, pepper, olive oil, and lime juice then toss well to coat.
Fold in bacon and feta.
Serve!
