Easy Baked Parmesan Zucchini






My mobile phone fell in the toilet Friday morning.
To be precise, I accidentally dropped my phone down the toilet.
It was 7am, I was ridiculously grumpy, and I was checking my emails. There were so many annoying ones I got upset and I accidentally dropped the phone (read this as throw it..ugh!)
I immediately retrieved it, wiped it off, and powered it down.
I ran to the get the hair-dryer and I blow-dried it for a couple minutes (I didn't realize that the heat is more damaging than helpful — so if it ever happens to you, don't do it!)
Nothing happened.
I was so shocked, I wasn't sure which emotion I was feeling. I wanted to be angry, but I couldn’t. It was so surreal, I was laughing hysterically.
You hear about people dropping their phones in the toilet, sink, pool, sea, lake, cup of coffee, bowl of soup, but you never think you’re going to be one of them.





Anyways, I was ready to buy a new phone when my friend Anna suggested to place in Ziploc bag filled with dry rice and leave it be for at least 3 days.
Which is what I did.
Monday morning I turned it on and it worked perfectly fine.
I’m serious.
It’s like nothing ever happened.
Maybe I was just lucky, or I’ve been patient enough.
I guess miracles can happen, and I guess that rice is magic.

These Easy Baked Parmesan Zucchini.
It's one of the simplest recipes out there, and one you'll be glad to have in your back pocket this summer, when zucchini are abundant.
Zucchini are tricky little things. They can be delicious, but, if not cooked just right, they tend towards the watery and bland. So a great zucchini recipe is a real bonus.
Baking zucchini is a perfect way to cook them. It intensifies the zucchini flavor, evaporates some of the water, plus it’s quick and easy.
Some Parmesan cheese, some herbs, a bit of seasoning. 20 minutes in the oven and BANG! crispy baked zucchini with a delicious Parmesan crust.

Ingredients
Serves 4

6 medium zucchini, quartered lengthwise
8 tablespoons grated Parmesan cheese
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon fine grain sea salt
¼ teaspoon garlic powder
Pinch of ground black pepper
2 tablespoons olive oil

Directions

Preheat oven to 350°F (180°C) .
Lightly grease a cooling rack and place it on a baking sheet. Set aside.
In a bowl, combine Parmesan cheese, thyme, oregano, basil, garlic powder, salt, and pepper.
Place zucchini onto prepared baking sheet. Carefully brush with olive oil (even and sprinkle with Parmesan mixture.
Place into oven and bake for 15 minutes. Turn on the broiler and broil for 3 minutes, until crisp and golden brown.
Serve immediately!
