Thai Zucchini Noodle Salad


Let’s talk zoodles…you know, noodles made out of zucchini. I got a spiralizer back when I started Whole30 and I fell in love. Zoodles are a great noodle replacement and, with such a mild flavor, you can put them into just about anything. My favorite right now is making Thai zucchini noodle salad to replace the yummy sesame noodles I typically get.

So, just like zucchini carpaccio, you don’t actually cook the zucchini for this recipe. However, if you want the zoodles a little softer, feel free to toss them in a pan for a minute or two. Just remember that zucchini cooks very quickly.

Thai Zucchini Noodle Salad Ingredients:

4 cups zoodles
1 tsp dark sesame oil
1/3 cup rice vinegar
1/3 cup coconut aminos
1 Tbsp fish sauce
2 Tbsp lime juice
2 Tbsp nut butter
1 Tbsp honey
2 cloves garlic, minced
1 tsp red pepper flakes
1 bell pepper, thinly sliced
1/2 cup cilantro, chopped
Sesame seeds {optional}

Let’s Make It:

1) In a small bowl, whisk together sesame oil through red pepper flakes.

2) In a bowl, combine zoodles and bell pepper slices. Pour dressing over top and toss to combine. Mix in cilantro. Serve topped with sesame seeds if desired.

Did I mention that this recipe is paleo if you skip those sesame seeds? Yep! So, this makes a fantastic paleo replacement for your typical take out order. Plus, with no cooking involved, it is a great summer recipe because you won’t have to heat up the house while cooking.

I eat these on their own or sometimes I will toss some grilled chicken for a complete meal. Either way, they taste amazing and are so good for you!

Ingredients
