Fresh Green Beans Recipe-

We have been harvesting green beans at a frantic pace these days. Beautiful dark green fresh veggies from the garden are so wonderful and filled with flavor. We have so many we have been sharing with family and friends. I plan to freeze a bunch this year too (fingers crossed they will continue to grow well throughout August). I always try to create recipes using fresh vegetables (especially if they are from our garden). I can always find a lot of ways to incorporate fresh green beans into recipes. But, I believe one of the best fresh green beans recipes you can make is one that just allows you to savor their flavor in every bite.
Green beans and mushrooms, is a light and fresh recipe which allows the beans to maintain their wonderful rich green color. If you do not have a veggie garden or access to fresh vegetables at your store or farmers market, I think you may be able to make this with a good quality frozen and thawed green bean as well.


What You Need
1Lb. Fresh green beans (cleaned, cut)
1 Cup mushrooms (cleaned and sliced)*
2-3 Tbsp. Oil ( your choice, olive oil or canola oil)
Sea salt
Large pot
Colander
Large Bowl
Nonstick skillet
Tea towel or paper towels
Salt and pepper

Before you Start- fill a large bowl (large enough to hold the green beans) with ice water and set aside.
Lets Make it! Fill a large pot about ¾ of the way with water, make sure it is large enough to accommodate the green beans and the water (at least one inch above the beans), a pasta pot works well. Add a pinch of salt to the water and bring to a boil over high heat. Add green beans carefully to the boiling water and let boil for about 3-4 minutes. Pour green beans through a colander rinsing with cold water. Add green beans to your prepared ice water bowl and make sure all of the beans are submerged. Drain cold green beans using your colander and pat dry with a tea towel or paper towels. In a skillet add about 2 tablespoons of oil and heat over medium high heat, add mushrooms and let cook for about 2-3 minutes stirring often. Add green beans to cooked mushrooms, stir well to coat with oil, continue to cook until green beans are fork tender (easily pierced with a fork) . Serve as a side dish or as your veggie lunch or dinner, salt and pepper to taste.
