chopped salad with apple + beets




This is one of my favorite salads, especially when the weather is warm and you just want something light for lunch or dinner. I like to serve it with some crostini and olive oil on the side, so good! You can really use any raspberry vinaigrette with this, but I love Trader Joe's.
CHOPPED SALAD WITH APPLE BEETS

serves 2

1 small head of romaine lettuce
1 small beet (peeled, boiled, and cooled)
1 gala apple
about 10 green beans
aged white cheddar, about 1/2 cup of cubes
raspberry vinaigrette
optional:
chopped pear, shelled edamame, red onion

- Wash and chop lettuce, apple, and green beans and place in salad bowl.
- Slice beets and cheese into small cubes and add to bowl.
- Add chopped pear, shelled edamame, and diced red onion if desired.
- Toss with vinaigrette right before serving.
