Nutella Cheesecake Recipe


Whenever I clean out my fridge I find all these left over ingredients from past recipes. Sometimes they arent very useful (why did I have a bag full of butter beans?!) and sometimes they are awesome! This weeks clean turned up one of the latter kind. I must have bought way too much cream cheese from my cheesecake cookie adventures a few weeks ago because I found an unused packet down the back of one of the shelves. Not wanting to let it go to waste I went searching for another ingredient and came across the left over Nutella from last week and an idea started to form... My mother (knowing my love for Nutella) had sent me a link to this fabulous recipe from My Baking Addiction and I had wanted to try it ever since but I never had a reason (until now!) I altered the recipe slightly as I found a few steps work better for me when completed a little differently from the original recipe - but it really couldnt be easier! The main thing I learned, is that these are delicious but fairly rich! Next time I will make them in smaller sizes, as the ones I made were really enough for two people... not that anyone complained... No Bake Nutella Cheesecake Recipe (Recipe based on that of My Baking Addiction) What You Need: 1 Packet of Oreo Cookies 3 tablespoons of unsalted butter, melted 230g of cream cheese, softened 2/3 cup of Nutella 1 teaspoon of pure vanilla extract 230g of frozen whipped topping/cream, thawed Your choice of Garnish What You Do: 1. Place Oreos into a zip lock bag and seal off (you may need to split into 2 batches depending on the size of your bag.) Using a rolling pin gently crush and beat the cookies until they break down into crumbs. Place crumbs in a bowl. 2. Stir into the Oreo crumbs 3 tablespoons of melted butter until the mixture is sticky but not wet. 3. Evenly divide the cookie mixture between your bowls/cups and gently press into the bottom. This will form the crust of your cheesecakes. Set aside. 4. In a large bowl, add the cream cheese and Nutella and stir until it starts to combine, then beat with an electric mixer until smooth (I found that beating the mixture straight away ended up with the cream cheese stuck to my beaters!) Add vanilla and continue to mix until combined. 5. Using a rubber spatula, gently fold in the whipped topping until no streaks remain. 6. Evenly pipe or spoon the filling into the prepared individual serving dishes with the Oreo bases. Refrigerate for at least 2 hours to set 7. Garnish with what ever toppings you prefer; whipped cream, chocolate shavings,or chopped hazelnuts. I chose to crumble a Flake chocolate bar on a couple and (using the same method as for the Oreo crumbs) broke up M&Ms and sprinkled them over the remaining ones.
