This Crockpot Balsamic Beef with Rosemary is the easiest, most flavorful meat stew out there! Only a few ingredients needed for this filling, delicious dinner.
I’ve been texting my husband pictures of presents I want him to give me periodically through the day when I’m “going to the bathroom”…and by going to the bathroom, I mean locking myself in the bathroom, sitting on the ground and browsing pinterest. #formysanity
I took that Love Language test a while back and know that my dominant love language is receiving gifts, so naturally I’m doing him a favor.

That husband of mine doesn’t understand my addiction to all things sparkly and the spa but that’s a vice I’m willing to overlook…if he gets me a certain ring. We could call it a 7 1/2 year anniversary band. That’s a thing…….ok, I could make that a thing.
He’s not really digging the whole idea of a diamond band, but then I said “you could get me a plain band with just a really BIG diamond on it instead!” and suddenly like magic he’s on board with the whole idea.

Anyways, I was going to post this recipe earlier in the week{…or was it last week?!} but obviously didn’t, so here she blows! Another stew-y kind of meal all thrown together in the crockpot! I’m all over the crockpot these days because I have no time and typically I always have a cranky child in one of my arms. #terribletwos #whileteething #yikes
This beef is fall apart tender, salty, tangy, garlicky, herbaceous and all things good that can bring about world peace.
If you need a fabulous meal that takes little to no effort, this is a great option. Throw it onto some rice or mashed potatoes and your dinner is done!

This Crockpot Balsamic Beef with Rosemary is the easiest, most flavorful meat stew out there! Only a few ingredients needed for this filling, delicious dinner.
Yield: 4 servings
Prep Time: 10 minutes
Cook Time: 6-8 hours
Total Time: 8 hours 10 minutes
4 lbs. stew meat
1/2 cup beef stock
1/2 cup balsamic vinegar
salt & pepper
2 sprigs fresh rosemary
2 bay leaves
1/2 yellow onion, diced
2 large cloves garlic, minced
3 tablespoons all purpose flour
2-3 tablespoons balsamic vinegar {optional}
Place meat, stock, balsamic vinegar, salt, pepper, rosemary, bay leaves, onion and garlic into a crockpot and stir. Cover and cook on low 6 to 8 hours or on high 4-6 hours. {You just want to cook it until the meat basically just melts in your mouth...3 steps beyond fork tender.} Using a slotted spoon, remove the meat to a separate bowl and discard the rosemary sprig stalks and the bay leaves.
In a separate, microwave-safe bowl, place flour and slowly mix in about 3/4 of the cooking liquid from the crockpot until smooth. Microwave 1 minute or until mixture thickens {will look super thick and gross....this is normal!} Whisk this paste into the remaining liquid to create a gravy. Taste, adjust seasonings and add in another 2-3 tablespoons of balsamic vinegar of desired. Return meat back to the crockpot and stir to coat. Serve over mashed potatoes or rice...or just by itself!
