Last week saw Lidl UK celebrating all things Iberian in their supermarkets, and as a lover of Spanish food and ingredients, I popped along to stock up on several items I had seen in their leaflet here: Fall in Love with Iberia. There was all sorts of lovely ingredients and products to choose from, such as Churros, Ensaimadas (sweet pastry swirls), Fresh Chorizo, Olives, Tortillas, Crisps, Pizza, Paella, Spanish Beer, Spanish Wine and even WHOLE Iberian hams too! But, it was the cheese, wine, aioli and olives that caught my attention, and I decided to create a meal using them, as well as creating a new recipe.

“!The Taste of Iberia” week has finished now (it ran from 9th April to the 15th April), but, there are still lots of Iberian ingredients in our local Lidl, and I know that they always stock excellent Serrano ham, chorizo, olives and a fabulous selection of British and Continental cheeses. I bought three cheese for a Spanish cheeseboard – Manchego, Mahon Menorca and Mahon Cabra (Goat’s cheese), and to accompany the cheese, two bottles of Spanish wines were added to the trolley, with some stuffed green olives. I love the fact that there were themed napkins too, so a packet of those were added as well as two pots of Aïoli for dipping.

As well as stocking up on my special Iberian produce, I was able to buy the rest of the ingredients I needed for my tapas lunch – baby gem lettuce, chicken breasts and cherry tomatoes. My Iberian style meal and tapas lunch then comprised: cheese board, wine, olives, aïoli, sliced chorizo, baby gem lettuce leaves, cherry tomatoes, patatas bravas and my NEW recipe creation for Spanish Chorizo Chicken with Olives, which I have shared below. Everything was extremely tasty and I was delighted with my new recipe creation…….if I had wanted to cheat a little, then Lidl also offered ready-made tapas in little clay bowls, which were amazing value at £3:49, and looked the part – but, I resisted as I already have so many bowls in the house!

A fabulous Spanish inspired dish with only THREE ingredients, this tasty recipe is on the table in under half an hour is is perfect for any Tapas style buffet or family meal.

Ingredients

  • 4 chicken breasts, skinned and boned
  • 4 fresh chorizo sausages, cut into pieces
  • half jar of Spanish green olives

Note

Directions


Step 1 Heat a frying pan over medium heat and add the chorizo sausage pieces; fry until they release their oil and are golden brown. Spoon them out of the pan and drain them on some kitchen paper - set aside.
Step 2 In the same pan, gently fry the chicken breasts, turning them all the time, for about 15 to 20 minutes, until they are cooked.
Step 3 Add the chorizo sausage back into the pan and heat through with the chicken, before adding the olives for the last minute or two.
Step 4 Serve the chicken, chorizo and olives with baby gem salad leaves and aïoli.
