Good morning! I hope you all had a great St. Patrick’s Day yesterday.

We didn’t do too much celebrating over here, but I hope to be able to make that up this weekend. I can’t get some of those Irish inspired meals out of my brain. Must… make… everything…. now. Isn’t that usually how Pinterest goes?

Anyways, I spent my morning networking on behalf of my gym at a community meeting today.

Although the 7 a.m. meetings come early on Wednesdays, I really do enjoy getting out and chatting with other businesses and ambassadors for companies in the area. I just walked in the door a couple of minutes ago, so let’s breeze right into today’s eats! Well, technically, yesterday’s eats for What I Ate Wednesday.

What I Ate Wednesday Tuesday

Yesterday flew by, which is actually the opposite of what I was expecting when I woke up feeling groggy with a head cold. There seems to be a lot of those going around right now, and I fully blame the weather. It’s back in the 20s today. Spring was nice while it lasted, right?

(And a projected snow storm this weekend? Eww. Just when I thought we were on our way up… You’re a tricky one, Mother Nature!)

I finally got around to breakfast a little after 9 a.m. I tried to get into the St. Patrick’s Day spirit by going green and came up with the festive meal you saw yesterday.

Gluten Free Ancient Grains Waffles topped in Key Lime Greek Yogurt, 1/2 a sliced banana, and sprinkle of chia seeds.

That kept me content until lunch, just as I expected it to. With a day off from working at the gym, I took that time to catch up on the computer. I stayed glued to my laptop throughout the afternoon and broke for lunch around 1 p.m.

Spinach, quinoa, tomatoes, diced grilled chicken, and feta cheese on corn tortillas.

(Thanks so much for the tortilla shipment, Olga. They’re delicious and still going strong!)

Feeling a bit on the achy and chilled side, I bundled up with hot coffee, clementines, a scarf, and fingerless gloves on the side of computer work for the rest of the day.

I couldn’t believe how long it took me to work on this graphic! The perfectionist in me spent hours adjusting every single line. Ahhh. I wish I wasn’t so meticulous about those things.

I had originally planned to run to the grocery store and make corned beef and cabbage soup in the crock pot for dinner, but those plans quickly fizzled when I finally posted late around 5:30 p.m. I hope to get around to it this weekend instead!

Without much time to spare, I hopped in the shower and got ready for a special green themed Pistons home game. Already hungry for dinner (why I didn’t eat before I left is beyond me…), I was very thankful to find a squished Clif bar on my drive over.

I’m loving the Cranberry Pomegranate Chia flavor!

I arrived to meet a friend right before tip-off and enjoyed watching our team put up a great fight through each quarter. We won and gained our first victory over the Memphis Grizzlies since 2009!

Hungry, I was tempted to order something to eat from our seats, but decided to wait for a “substantial dinner” afterwards with Scott instead. He’s always starving by the time he gets out around 10:30 or 11 p.m.!

Haha! I can’t handle that photo. Just in case you can’t read it, his hat says “I’m a WEE-BIT Irish,” which is completely accurate. Also, I’m not sure who’s hat is better. #stpattysattireforthewin

We considered popping into an Irish pub for an authentic Irish meal, but figured they would all be past the point of a regular dinner menu by the time we got there. Instead of warding off the drunks, I asked Scott what he wanted to quickly grab on the way home.

Without many other options available, he went with Taco Bell. Who am I to stop him? I honestly can’t even remember the last time I drove through one of their windows. I ended up ordering two chicken soft tacos and hoped for the best!

Drizzled in hot sauce, it wasn’t all that bad. Ehhh… you win some, you lose some.

We also dug into the corn tortilla chips and salsa when we got home, and I topped it all off with a large glass of unsweetened almond milk for dessert. So random, yet so perfect.
