Healthy Eats: Peanut Butter Cookies

Lets face it – peanut butter is pretty much the food of the gods! And in sensible portions, it’s a great source of fiber, protein, healthy fat and potassium. I always make my healthy snacks on a Sunday afternoon because it satisfies my baking needs and it ensures I always have something nutritious to grab when I’m in a rush or just need something with a cuppa. These peanut butter cookies are fantastic if you are a fan of PB and they really do keep you full for a long time. They contain no sunflower oil, refined sugar or white flour.

Ingredients:

  • 1 cup organic peanut butter
  • 3/4 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup whole wheat pastry flour
  • 1/2 cup unsalted peanuts (optional)

Directions:

  • Preheat your oven to 175oC.
  • Combine all of the above ingredients in a large bowl and combine thoroughly.
  • Using two teaspoons, scoop and drop the cookies onto a baking tray lined with baking parchment.
  • Pop the cookies in the oven for about 12 minutes. Make sure your cookies are roughly equal in size and thickness so they bake evenly. They should be no thicker than 1/2 inch. The cookies will bake as they are with no spreading.
  • Remove from oven and cool.
