Datefull Energy Bars

Good eve!! It’s raining awfully hard as we speak and it’s opposite from what the weather was like for the last couple of days, and I don’t mind! I have been looking forward to Autumn to be honest, even though I’m that typical beach bum who checks the weather forecast every couple of hours to see if Summer will remain in town :P When I’m not a beach bum I love being at home cooking, baking, crafting some new D.I.Y. items (I will also start posting these soon), watching my series, play some records and just, be at home with my babe and my pets :) Sounds like I’m getting old? Nah, just a domestic type who loves to be outside too. And yesterday we went to my bf’s parents and I wanted to give my mum in-law something boosting since she hasn’t been feeling so good and loves dates so SO much; perfect reason to make them, right? And she loved it! Super happy about that, so why not share this recipe with you as well. Down below you can see I have installed the Ziplist plugin, which means you can create an account and save the recipes, cool right?? Alright, here we go:

I have found the recipe on Real Food Forager and changed it a little bit, there are a zillion combinations possible, but these were the ingredients I had at home and it really is so so tasty!

Datefull Energy Bars

Ingredients

  • 3 cups pecans
  • 1/2 cup almonds
  • 1/2 mixed seeds
  • 13 pitted and soft Medjool dates, soaked for at least 30 minutes
  • 1/2 cup cacao butter (I used the one from Superfoodies)

Instructions

  1. Blend the pecans, almonds and seeds to a buttery consistency and set aside in a bowl.
  2. Blend the dates to a thick paste.
  3. Heat up the cacao butter on low fire until melted.
  4. Add the melted cacao butter and date paste to the nuts and blend well until you create a firm ball.
  5. Spread out in a tin pan and cover with parchment paper.
  6. Place in the fridge for about 3 hours and cut with a pizza slicer into 12 bars.
  7. Wrap in parchment paper, place in an airtight container and place in the freezer.
