Fluffy Protein Pancakes – Finally a recipe that works!

Holy smokes! I haven’t blogged in a while due to overload of life and I’m also late with posting this BEYOND IMPORTANT recipe, for all you fluffy pancake lovers who have been like me; failing on creating thick and moist pancakes, so I herewith apologize. I have 2 jobs and thought I left my Macbook charger at one, butI found out on Monday I left it on the other, where I only work on Wednesdays. Hence the delay, but I promise that I am making it up to you when you have tried this recipe, because OH MY GOD how heavenly was this?!? I have been trying for 2 years to create pancakes that come even close to a thicker-than-a-penny-pancake, and for some reason I see so many Instagramers post their lovely successes, which got me very frustrated. Well, not anymore because this pancake is pure porn and I can’t wait to hear your opinion! On to the recipe:

Well no, before I post the recipe I must state that you have to make sure of 2 things: 1) LOW fire after heating up the pan, and 2) patience. LOOOTS of patience :) And appetite as well!

Ingredients

  • 2 eggs (room temperature)
  • 2 eggwhites (room temperature)
  • /- 1 scoop OnePancake from Fitnessguru (or 1 scoop protein powder that you like)
  • 1/2 cup coconut flour or 1 cup finely shredded coconut flakes
  • 1 mashed spotty banana
  • 2 tsp vanilla essence
  • 1 tsp baking soda
  • pinch of pink Himalayan salt
  • Coconut oil for baking

Instructions

  1. Mix the whole batter in a bowl and make sure the batter is THICK! If it's too liquid, add more OnePancake, protein powder or coconut flour/flakes.
  2. Heat a pan with coconut oil, then turn it on low fire.
  3. Use a soup spoon and fill it 3/4 full and pour the batter gently and slow in the pan, as round as possible. Use a spatula to shape them when needed. I bake single pancakes, so it takes a while to have my batch together just because in my mind the low fire can only heat up 1 pancake at a time nicely, but you are more than free to try and bake 3 or 4 at once.
  4. Play with the fire from low to medium, but mostly super low other wise it will burn. Can you see your pancake rising slowly after 2-3 minutes?? It takes about 4-5 minutes until you can flip the pancake, as soon as you see the batter is firm enough. Slide the spatula carefully underneath the pancake, as the batter is quite fragile. Flip it in 1 fast movement and right away shape the pancake with the spatula when you see it splatter a bit. Don't panic, this is normal and shaping it will make it pretty again, woohoo!
  5. The pancake is ready about 2-3 minutes later, when you find it cooked enough. Repeat this until your batter is gone and decorate the pancakes with whatever, and DIG IN!! You've waited long enough :P

I'm sure there are people who know a faster way to make fluffy pancakes, but this was the first that worked for me and I figured it out myself :) When you know a faster method; please holla at ya girl!
