Fitness Friday | Ski Trip + Still Loving My Spiralizer

If not, please do @EbonyCPrincess; I actually intended to get this post up last week but weather delays kept me in Jersey longer than planned so I’m a week late sharing. I seem to always assume that everyone is up to date on things from my IG account….which is totally unfair. Anywhoo – those who are following probably caught some of my pictures from a couple of weeks ago when I went on a ski trip. I actually went home to NJ, where I met up with family, friends and my boo then took a road trip into the Poconos mountains. This was my first “ski trip” – although only two members of the group actually skied. The rest of us went snow tubing (check me out below), as we only had one full day on the slopes. Next time though, I’m definitely skiing and extending the trip to a four day weekend at least!

Okay, so why is my ski weekend relevant to #FitnessFridays? Well, first of all – I loved the fact that I planned an “active” trip for my friends and I in a cabin rental. There are tons of things to do within driving distance of New Jersey, we could have gone to a casino and resort for the weekend, or checked into a spa. A bed and breakfast or simply taken a trip into the city. However, I decided to invite everyone to do something we don’t do everyday and removed the option of eating out. During the holidays I had a lot of “I’ll get back on it after this” type of thoughts. My body can’t afford to keep having reasons to splurge, so I opted for a large cabin rental for our group of 13 adults.Sure, we could’ve all stayed in a hotel – but by choosing a cabin, it gave us more time together plus access to a full kitchen. I planned (and prepared) meals for the entire group. Friday we had spaghetti with turkey meatballs and salad. Saturday everyone had the option for either beef stew or chili with ground turkey (via slow cookers). We also prepped breakfast and had plenty of snacks – both “junk food” and healthy options. No one ate out at all. My point in sharing is that vacation does not HAVE to equal pigging out! It doesn’t have to mean lounging around and doing nothing. We can have fun on vacation and stick to a healthy, active lifestyle. We all had so much fun and everyone wants to make it a yearly trip. Plus, its not expensive at all (since it’s within driving distance of everyone but me…but NJ is home so that’s okay). Long story short – we had fun, we ate well and we were outside, enjoying the fresh air and for those who skied, got some great exercise.

On an entirely unrelated note…I am still loving the spiralizer I shared a couple of weeks back. I learned that spiralized zucchini has a name – zoodles! Who knew?! I haven’t been this excited about a kitchen gadget (and ya’ll know I have a ton) since the George Foreman grill! Just yesterday I made what I call Fiesta Shrimp with Zoodles and Squoodles (squash noodles). Simple recipe – season the shrimp with seasoned salt and cayenne pepper, saute with garlic, cherry tomatoes and of course the zoodle/squoodle mix all in spicy salsa. Delish!!!

This is a rather informal Fitness Friday post, but I just wanted to share what’s been working for me and check in with everyone.
