Marin mama’s weekly dinner menu for May 3rd

Happy Sunday peeps! It’s 10:00 and I’m honestly sitting here struggling with what to say to introduce this weekly menu.

I’ve been typing text..

then deleting it..

re-typing something else..

then deleting that.

This is honestly how I’ve spent the last 2 hours, so I’m just going be honest and admit to you all that I’m at a loss for words today, and I’m in a total writing rut. Whew, that felt good and liberating.

To be honest, there really wasn’t anything exciting, or should I say blog worthy that happened this past week. It was my last week working for Paradise, so I kind of spent the week finishing up and closing up shop, which is exciting, but sad and scary at the same time.

So, I’m officially in limbo land now with work and with life. I don’t plan to stay here long, as that’s not my personality, (and it’s sort of boring) but for today I’m here, and I’m accepting that it’s ok! Limbo land is sometimes where we have to be before we expand, open up and make that next move.

OK, so this week wasn’t a total wash, as I tried a new meatless taco recipe which I think you will all love. I made up some sweet potato tacos with avocado creama. These tacos are SO GOOD and totally Zoe approved! Eli was at a 3 hour baseball game when I made these up, so he didn’t get to try them, but he was totally ok with that!

I’m going to post the recipe for these tacos this week.

Besides being in a writing rut, I was in a food staging rut, so my creative friend Kimber came over and helped me stage the tacos. I think we did a pretty great job, and we make a great team!

Ok, so since I don’t have anything else exciting to share, let’s just move onto this week’s menu….

Monday night dinner: Meatless Monday! Broccoli rabe and shallot ravioli and crispy garlic bread. This is such an easy meatless Monday 30-minute meal. I typically use broccoli rabe in lieu of green beans because we just LOVE broccoli rabe and tend to eat too much of it, but that’s ok, I can think of worse addictions. Zoe absolutely loves this garlic bread! It’s truly one of her favorite things, and it’s so simple, crispy and just overall yummy!

Tuesday night dinner: Citrus-marinated chicken, 5-minute roasted Brussels and popovers. My kids have been begging for this chicken. It’s funny because lately I’ve been running into a lot of friends and readers who are making up this chicken. The marinade is super simple to throw together, and it’s a perfect weeknight recipe, as the marinade only has to sit on the chicken for a minimum of 20 minutes. Yippee! You can use either chicken thighs, drumsticks and breasts, or all three if you want. I typically use bone-in skin on breasts that I have the butcher cut in half, so they absorb the marinade better. The chicken gets all crispy under the broiler and then you top it with the reserved citrus marinade, and wow, talk about tasty. Lately, I’ve been topping my roasted Brussels with a bit of freshly squeezed lemon juice and some parmesan cheese! If you don’t have time for making popovers, (even though they literally take 30 minutes) you can just sub in some crusty french bread.

Wednesday night dinner: Another meatless night! Broccoli rabe pizza and roasted broccoli See, I told you we were broccoli rabe obsessed. Wednesday nights are busy and we eat at 5:30, as Zoe has 3 hours of dance, so I want a simple meal. I figure if I’m already cutting up broccoli rabe for the pizza, why not cut up some extra to roast up! My kids love and it don’t complain, thus making dinner even easier!

See how happy my kids get with roasted broccoli? How could I not make it for them!

Thursday night dinner: Pasta with kale, lemon and toasted walnuts. Wow, I’m realizing that we’re having a pretty carb heavy week, but I love carbs, so it’s all good. This pasta is easy, kid approved and makes enough for two nights, or it’s great for leftover lunches. We typically use whole-wheat pasta when making this up, which I show you in the post.
