Tomorrow is National Donut Day – yay!!! A day we’ll gladly celebrate by eating donuts all.day.long! We have a serious donut obsession around here, we take vacations based around our favorite donut shops! I’d been trying to think of an “easy” donut recipe to share in honor of such an important day ; this time of year is so crazy busy for us and we celebrate about a dozen family birthdays during this time, so I just don’t have the energy or time to bake one more thing. While I was at the grocery store, looking at s’mores goodies, suddenly I thought, I should make s’mores donuts!! They’re two of my favorite foods and last year’s combining of two favorites, Donut Ice Cream Sandwiches, was delicious, so why not try this?!
Yesterday we celebrated Abram’s 3rd birthday and tried out the s’mores donuts. Since I knew we’d be eating these with all the kiddo’s, I thought mini donuts would be fun to make s’mores with! As you can see from the pictures near the bottom of the post, they’re just right for little hands! And if you could have seen the birthday boy dancing around while he tried his s’more, you would know they were a hit! We also experimented with different flavor donuts and specialty chocolate (like peanut butter cups and salted caramel chocolate)! We liked peanut donuts with with peanut butter cups and chocolate glazed donuts with salted caramel chocolate!
We did use the giant marshmallows for the regular size donuts, and size-wise they worked pretty well. However, I would prefer using a few regular marshmallows instead of one big one, because the giant marshmallows just don’t roast the same and the texture is off a bit for me. For the mini donuts, we just used one regular size marshmallow.

chocolate (try with some specialty chocolate too like PB cups and salted caramel)
Slice donuts in half. Roast marshmallows over fire till golden brown. Place chocolate on bottom half of donut (I like to melt my chocolate slightly, either in the microwave or sit it next to the fire for a bit), top with roasted marshmallow and the donut top. Enjoy!
