It’s 7:30 in the morning. Who’s ready for happy hour?

The Shelby Park greenway was full of encouragement today! Must have been a group run or race there recently — I get to reap the rewards of all the inspiration jotted down along the course
Five-mile fartlek. One mile easy, and then alternating easy-hard every half mile after. Over before I knew it.

Don’t you guys love this rustic bridge? Does anyone know if it’s actually still in use? I’ve yet to see a train go by on it. I wonder if you could walk on it… (These are the thoughts I have when I’m running.)

Another question for you: Have you heard of Cook Smarts? It’s a meal planning service that seems to focus on healthy weeknight meals. I recently signed up for a 14-day trial. First meal on the menu: Shrimp vermicelli!
I thought that the recipe seemed too simple to be good — but I was wrong! We both loved this dish, which was light yet filling at the same time.
We made our bowls more like salads. The Nuoc Cham sauce tied it all together with a spicy kick!
Looks like the Cook Smarts recipe is available here if you want to try it — I’d recommend it! I thought this was an easy weeknight meal to pull together. I prepped many of the veggies on Sunday to save even more time.
