Bacon & Avocado Scrambled Eggs over Waffles



Um, yeah...so, I'm going to go ahead and say that this little meal right here was quite brilliant.

There is this little taco joint where I love their bacon and avocado tacos...so, I turned that into an egg breakfast and put it on top of a waffle. My kiddos and I made these for brunch one day and they were a HUGE hit! Breakfast, brunch, lunch, dinner...whenever, you seriously need to make these! In fact, they were so good, that as soon as I'm done typing out the recipe here, I'm probably going to go make me some more :).

It's a waffle...with scrambled eggs, bacon and avocado on top. Amen.

This recipe serves four.

Shopping List
one dozen eggs
3 splashes of milk or half and half
a nice pinch of salt and pepper
8 pieces of crispy bacon, roughly chopped
2 avocados, halved, seeded and cut into chunks
about 10 green onions, chopped
1 cup of shredded Pepper Jack (or Monterey Jack) cheese
4 fluffy waffles (I just whipped up some with Bisquick!)


In a large mixing bowl, scramble up your eggs with a whisk. Whisk in your milk along with a nice pinch of both salt and pepper.

Add scrambled eggs to a big skillet over medium-high heat that has been lightly sprayed with cooking spray. Immediately start scrambling them with a spatula in the pan. After about a minute, stir in your bacon pieces, avocado chunks, green onions and cheese.
Once scrambled, take one waffle per person and add a big scoop of scrambled eggs on top. Garnish with a few more chopped green onions.

I mean...so simple and so good (and filling too!!). The waffle just adds a nice carb to this protein meal (but you could totally omit it if you like). No matter how you make it...you're going to love it!
