Because You Know I’m All About That Soup…

…’bout that soup. No trouble.

Haha. Did you catch my little play on the ever so catchy and totally overplayed song “All About That Bass”? I’m a clever one, eh?

I totally love and adore soup – soups of all kind really. They’re comforting, delicious, and can be so simple! I’ve been craving them like crazy lately with some of the chilly days (well, Phoenix’s version of “chilly”) we’ve been having lately. I especially love that I can make so many of them in the Crock Pot and let them simmer all day long without much work involved.

As I was making my meal plan for the week, I realized I had soup THREE times on the menu. Guess there’s a “soup theme” for the week? I’ll take it!

Here’s what’s on tap for the week:

Monday – Slow Cooker Chicken Tortilla Soup {topped with avocado, shredded cheese, and cilantro}

Tuesday – Broccoli Cheese Soup {with crusty bread}

Wednesday – Sneaky Meatball Subs {with steamed green beans}

Thursday – Panini Sandwiches Tomato Soup

Friday – Homemade Pizza

Saturday – {Day trip to Tucson}

Sunday – TBD {likely dinner with family or leftovers}

So did you guys have a good weekend?

Ours was really nice all around – it was a great end to not my favorite week ever. It was the perfect mix of spending time together just the three of us, relaxation, quality time with family, fun times with friends, and a little productivity in there too.

We went out for hamburgers at Smash Burger on Friday evening and even got to sit out on the patio to enjoy the gorgeous weather. It wasn’t too chilly that evening, so we took full advantage. This is our “nice” time of year, so we’re trying to enjoy every bit before it gets ridiculously hot again in a few months. It was my first time trying Smash Burger, and I was super impressed. Their ingredients were really fresh, the burgers were made with 100% lean angus beef and they weren’t overly greasy, the French fries were tossed in olive oil and rosemary (yum!) … and yeah, it was all delicious.

I spent some time reading the new Emily Giffin book I rented at the library, The Heart of the Matter, on Saturday morning before Hunter woke up. I’m totally sucked in and can’t stop reading!

The rest of the morning was spent getting Dutch Bros. coffee (if you’re ever in the Phoenix area, Dutch Bros. is a MUST!)…

…and took the dogs to the dog park where they were in total dog heaven. We found this awesome dog park not far from our house, and we’ve been taking full advantage the last couple months. (It’s Cosmo Park for those of you that are local!)

I spent the afternoon going through a CPR recertification class. I’ve been certified in CPR for about ten years now, and I continue to be amazed at how much simpler they’ve made it. I’m not complaining – it’s much easier to remember!

Saturday evening we headed over to my mom and stepdad’s neck of the woods to go out to dinner with them and my aunt, uncle, and cousins for my parents’ birthdays (they both had birthdays last week). We went out to this Italian restaurant where I ordered baked tortellini with alfredo and marinara sauce … um, amazing! And then we hit up fro-yo for dessert. (Pretty sure this weekend helped me kick off this whole weight gain thing with a big ol’ bang! )

Sunday involved donuts with friends, church, and then we headed over to my dad and stepmom’s house to watch the Packers vs. Cowboys game. Go Pack go! I can say that now since the Bears {Cody’s team} aren’t in the playoffs. Hehe. (For those of you that don’t know, my dad is a hardcore cheesehead and Cody is a big Bears fan. It makes things interesting at times. Ha!)

I’m excited to start this new week… I like a fresh slate every once in awhile!
