My youngest daughter, Michelle, is a major jock and she loves the competition of playing and watching sports.
She also sees life as a competition and jumps to the occasion of conquering her fears, and the ever present bumps in the road of life. But she loves easy food that can be thrown together in a crock pot and food that soothes the body and soul. Yep easy comfort food and fierce competition is her forte!!
We are having a crowd over for The Big Game playoffs in March and I immediately thought of Michelle's Taco Soup.
It's her favorite go-to dinner, it's all comfort on the inside but tough enough for any competition and it can really feed a crowd!! It's delicious and it can soothe those hurt feelings when one's team is knocked out of the playoffs or dished up to celebrate all victories!!

Ingredients
- 2 lbs of ground beef
- 1 onion, chopped
- 2-3 cloves of garlic, crushed
- 2 cans of Ranch style beans
- 3 cans of stewed or chopped tomatoes
- 1 can whole corn
- 1 can RO*TEL®
- 1 package taco seasoning
- 1 package dry ranch dressing mix
- cheddar cheese, grated
- sour cream
- jalapeños
- tortilla chips
Instructions 1. Brown ground beef, onion and garlic in a large dutch oven. Salt and Pepper to taste. 2. Add all ingredients and stir to combine 3. Let simmer for 30 minutes or place in slow cooker on low for 3-4 hours. 4. Serve with toppings of choice
