Clean Eating Walnut Blueberry Banana Bread

I have recently been doing the clean eating meal plans. I am on my 3rd week and the food and recipes are easy to follow. It’s a great way to ease into clean eating and learn how to shop and even cook. I have to admit I feel a lot healthier getting rid of processed foods and sugars. The family doesn’t seem to mind either. My husband has already attacked half the loaf of walnut blueberry banana bread.

This recipe was among the many delicious and clean meals, I have made. I wanted to share this yummy walnut blueberry banana bread. It was super easy and makes a great snack or breakfast. Today I paired it with a cup of Greek yogurt. Pretty simple right?

Print Clean Eating Walnut Blueberry Banana Bread
Ingredients
  • Olive Oil Cooking Spray
  • 1 Ripe Banana
  • ¾ cup of ground flaxseed meal
  • 2 egg whites
  • ⅓ cup of raw honey
  • 1 cup of buttermilk
  • 1 tsp of baking soda
  • ½ tsp of sea salt
  • ¾ cup of whole wheat flour
  • ¾ cup of spelt flour
  • 1 tsp of orange rind, grated
  • 1 cup of blueberries
  • ½ cup of unsalted walnuts, chopped

Instructions
  1. Preheat oven to 375 F. Spray a nonstick loaf pan. In a large bowl, stir banana, flaxseed, egg whites, honey and buttermilk. In another bowl,mix baking soda, flours, and orange rind. Combine dry and wet ingredients. Fold in blueberries and walnuts. Bake for 45 minutes.
