The "I Can't Believe It's Paleo" Bread


When it comes to food, our lifestyle has been all over the place. Trying to find what works the best for us and for our health. We were following the paleo lifestyle a while ago, but we fell off the wagon for love of carbs. I'm not proud, but I am truthful!
This next week we are starting on a whole different adventure but we have come back to Paleo as a launching pad. Here is what helped to transition away from gluten. It was pretty yummy! And I am not just saying that because I am wheat deprived!

"I Can't Believe It's Paleo" Bread
yield: 1 loaf | prep: 5 minutes | Total time: 1 hours 35 min

Ingredients:
  • 1 1/2 cups almond flour
  • 1 1/2 cups cashew flour
  • 4 large eggs
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 1/4 cup coconut oil (plus some to grease pan)
  • 1/2 water
  • optional: 1 Tbsp raw honey

Directions: Preheat oven to 350 degrees. Place all the ingredients in a blender or food processor and blend. (this, of course, can be done by hand but I'm saving you some time) When well combined, add to a coconut oil greased loaf pan and pop it in a 350 degree oven for about 30 minutes, or until center is set up. Insert toothpick in the middle, if it comes out clean it is done.
Once you remove from the oven you must let it set for at least 1 hour (possible more). If you pull it out of the pan too soon, while its hot, it may crumble. If you wait, it will not.

This bread is a great substitute for us carboholics! It packs a double punch with all that protein!
