I always keep three or four extra cans of RO*TEL in my pantry because I like to add RO*TEL to many of my favorite recipes to change things up a bit. You can add a can of RO*TEL to my Cheesy Black Bean Dip to make it just a bit zippier. It would spice my Edamame Salad up to add a tablespoon or two of RO*TEL.
