English Breakfast Tea Cookies


Hey guys! I don't have internet on my computer right now. For some reason the connection in our office is faulty so i'm testing out this Blogger app for iPhone. I'll see later how it turns out.
Anyway, last Christmas we were given a box of Waitrose English Breakfast Tea that has about 50 bags. I do drink tea but usually it's green tea or chamomile. I didn't know what to do with these tea bags so I thought why not use them for baking? So I did and this is the finished product:

I saw this recipe from Add a Little Sunshine. The ingredients are similar to the ones when you makes shortbread cookies.

Ingredients: 1 cup all purpose flour 1/4 cup granulated sugar 1/4 cup confectioners sugar 1 tbsp black tea leaves 1/4 tsp salt 1/2 tsp vanilla 1 tsp water 1/2 cup butter
Directions: 1. Preheat oven at 375 degrees. 2. Chuck all the dry ingredients and then the wet ingredients in a food processor and pulse until it forms into a dough. 3. Roll the dough into a log on a sheet of parchment paper. Chill in the freezer for 15 minutes. 4. Slice the log into 1/4-1/3 inch pieces and place them on a cookie sheet about half an inch apart. 5. Bake for 12-15 minutes until cookies are golden brown.

First of all, it tastes buttery because obviously butter is the main ingredient. I couldn't taste the tea while I was eating it, but it had an english breakfast aftertaste.
If you think that these are not sweet enough, you can roll the cookies in a bowl of sugar. It will taste just like those Danish cookies that they put in tin cans.
