Garlic Chicken Alfredo Pizza

Before we were blessed with the wonderful, sunny weather we’ve been having, there were quite a few overcast, cold, and gloomy afternoons. On one of those chilly days, Kate and I stayed inside in our jammies all day. We snuggled, read stories, napped, made faces at each other in the mirror, played peek-a-boo, giggled a lot, and cooked up a storm! It was great. I love my little sidekick.

For our family, homemade pizza is comfort food at its finest—and there is no better day for comfort food than a cold wintery day!

This recipe is super delicious, wonderfully easy, and totally customizable! I used Bobby Flay’s pizza dough recipe, but if you have your own favorite pizza dough recipe, go ahead and use that! And don’t let the idea of homemade pizza dough scare you away. Pizza dough only requires a few ingredients and only has to rise for an hour or so. AND, once it has risen, you don’t even have to use a rolling pin to roll it out! Just use your hands to shape it and push it to the edges of your pan. The dough recipe that I used is enough for two pizzas, so after I let my dough rise, I put half of it in the freezer for next time.

For the sauce, I found an alfredo sauce recipe that I liked and dressed it up with some extra spices and fresh garlic. However, feel free to use traditional tomato sauce if you aren’t an alfredo fan! For the toppings you are free to use whatever you like best! I used some grilled chicken (seasoned with salt and pepper), thinly sliced red onions, and some spinach because that was all my fridge had to offer on that particular day. Some other yummy things to add would be crumbled bacon, grape tomatoes, and fresh basil.

Oh, and two things to keep in mind:

- Using bread flour instead of regular flour will give you crispier crust. I only had regular flour and it resulted in a crust that was perfectly crunchy on the bottom and chewy on the inside (I also used half wheat flour, half white)

- Once your dough has risen and you have flattened it out for your pizza, poke a few holes in it with a fork to prevent bubbles and then throw it in the oven to cook before you put your toppings on. Take it out when it is BARELY golden brown (so not quite done) and then pile your toppings on and throw it back in! I also like to turn my oven to broil for the last minute or so to really get that cheese bubbling.

Ingredients
  1. 1 pizza dough (see link in above post)
  2. 1-2 cups grated Mozzarella cheese
  3. 1 cup grilled chicken slices seasoned with a pinch of salt, pepper, onion powder, and garlic powder
  4. Toppings such as spinach, basil, grape tomatoes (cut in half), thinly sliced red onions, crumbled bacon, etc. Use your imagination!

Alfredo Sauce
  1. 2 tablespoons butter
  2. 1 clove garlic, minced
  3. 1 teaspoon red pepper flakes
  4. 1 tablespoon all-purpose flour
  5. 1 cup heavy cream
  6. 1/4 cup grated Parmesan

Instructions
  1. First, prepare your pizza dough. While your dough is rising, season the chicken with salt and pepper, to taste. Put the chicken on a grill pan and grill until cooked through. Remove to a cutting board and cut into thin strips or cubes. Set aside.
  2. Preheat oven to 350.
  3. Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Next, add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened (roughly 2 minutes). Stir in Parmesan and season lightly with salt and pepper, to taste.
  4. Take your pizza dough and use your hands to spread it out onto your GREASED round pizza pan (if you have a pizza stone, warm it in the oven first and roll out your dough before transferring it to the stone). Brush your dough with some melted butter and put it in the oven until it is BARELY golden brown (roughly 15-20 minutes).
  5. Take your crust out of the oven and load it up with the sauce and cheese. Evenly top with toppings, brush the edge of the crust with olive oil or melted butter, and season with a light dusting of salt and pepper. Put the pizza back in the oven until the cheese is melted and bubbly, another 5-10 minutes. Slice and serve.
