Crock Pot Paleo Beef Stew



I love recipes like this that are crazy easy to make, yet loaded with flavor (and provide plenty of leftovers!).

For those of you who don't do peas or white potatoes, simply omit them or make the substitutions that work for you (such as parsnips or sweet potatoes). I made this stew at the caveman's request, and he firmly stated that his definition of beef stew is pure and simple and most definitely includes potatoes!

I have not tried this on high, but I would imagine it would work fine. My suggestion would be about 6 hours.

Crock Pot Paleo Beef Stew

2 lb. beef stew meat, cut into cubes
32 oz. organic beef broth
6 oz. can organic tomato paste
1 tsp. salt
1 tsp. pepper
1 medium yellow onion, chopped
2 cups chopped carrot
1 cup chopped celery
2 cups chopped organic potatoes
3 minced garlic cloves
2 tbs. coconut aminos
1 tbs. minced fresh rosemary
1 cup frozen organic peas
2 tbs. arrowroot starch
2 tbs. water

Combine meat, broth, tomato paste, salt, pepper, onion, carrot, celery, potatoes, garlic and coconut aminos in a crock pot. Stir to mix ingredients. Cover and cook on low for 9 hours.

Mix arrowroot in a small bowl with water to form a slurry. Stir into crock pot along with frozen peas. Recover crock pot and cook an additional 30 minutes on low.
