Vegan Weirdo Wraps



I am calling these burritos, Vegan Weirdo Wraps because they have a lot of the stuff that makes people think vegans are weirdos - kale, sweet potatoes and black beans. And I like the way it sounds. These are super easy to make and perfect if you are like me and want to make your lunches ahead of time. And if you are a weirdo.

INGREDIENTS: 3 sweet potatoes 2 cans black beans 4-5 cups chopped kale 6 tortillas Extra virgin olive oil Salsa or hot sauce Tofutti sour cream
ALSO NEED: Foil
DIRECTIONS: 1. Rinse, dry and fork holes in sweet potatoes. Wrap individually in wet paper towel. 2. Microwave on high for 8-10 minutes, flipping every 2 minutes, until they are cooked. Then put in a big bowl with ice and water to cool. 3. Rinse black beans and cook in an inch of water until heated. 4. Cook kale in a pan on medium high heat with a splash of olive oil, salt and pepper. Keep tossing until bright green and slightly browned. 5. Heat up tortillas on a paper towel in the microwave for a minute. 6. Make 6 foil rectangles and lay out tortillas on each, creating a production line with your three fillings handy. 7. Using a spoon with holes, scoop out the beans, draining the water and put in the center of each tortilla until they are equally distributed on each. 8. Spoon in cooked sweet potatoes. 9. Throw in kale on top. 10. Fold up your burritos. Fold up bottom 2/3's of the way up and squeeze down your fillings. Fold in sides and roll the burrito from the bottom up. 11.
