Pacific City, Oregon Beach with Sweet Potato Sausage Foil Meal

The classic meal in a foil pouch, Sweet Potato Sausage Foil Meal, is easy to prepare at home in heavy-duty foil, and cook on a campfire (you will need tongs, hot pads, and a cooking grate).

Last week my husband and I set out on a road trip on the cheap. “On the cheap” means we take our 1987 Westfalia camper van on the road, and camp wherever we find a place we love.

Our all time favorite is Pacific City, Oregon. Enjoying camping means getting off the ground, we’re far more comfortable, and we love our Westy bed.

My husband detailed the VW before we left, so it was nice and shiny and pretty.

Little did we know that we’d get so much attention on the beach!

You spend a lot of time talking with people who stop you … and they either have a Westy, or they want one, or … they want a tour. (more…)
