COCKTAIL HOUR: THE BEST MOJITOS IN TOWN




So, its Friday; the end of the week; the start of the weekend.... What better way to celebrate than cocktail hour with the girls? There's so many variations on the Mojito, but if you're entertaining tonight, take a peek at this tried and tested recipe. Motijos aren't difficult to make yourself once you know how, just beware, this may become a weekend essential if your friends are anything like mine! So come on, roll up those sleeves, practice makes perfect!



You'll need:
Limes {roughly one per glass}
Brown sugar or Monin Gomme Syrup
A bunch of fresh mint {you'll need 4-5 good size leaves per glass}
White rum {Bacardi works great!}
Soda water
Crushed ice
A cocktail muddler or wooden spoon



Start by cutting the limes in to quarters and squeeze the juice in to a glass. One lime per glass should be fine but leave some spare quarters to one side so you can adjust to taste later.



Use a cocktail muddler (or the end of a wooden spoon or rolling pin) to crush or 'muddle' the limes and get all the juice out.



Add a couple of spoonfuls or brown sugar and muddle again. If you're struggling to dissolve the sugar, a great tip is to warm the sugar in a little hot water and use the syrup (allow it to cool a little!). Alternatively, use Monin Gomme Syrup, its quick and easy with a great taste and available in most large supermarkets in the spirits isle.



Next, add you mint leaves. 'Clap' them (literally) in your palm first to release the aroma and oils. Around 4-5 good sized leaves will be fine - muddle again.



Add 30ml of white rum to the glass. Muddle again.



Top up the glass with crushed ice (if you don't have a crusher, place ice cubes in to a clean tea towel and carefully crush with a rolling pin). Fill with soda water.

Now's the time to test your creation... a Mojito should taste sweet and sour with equal amounts of mint and lime. If your glass is lacking add a little more lime juice, sugar or mint leaves. Be sure to give it a good stir and garnish with a spring of mint. Viola!
