Super Bowl Sunday - Layered Bean Dip!


Happy Super Bowl Sunday! Today I would like to share a "Layered Bean Dip" that is to die for! ;)
I made homemade salsa: Tomatoes, 2-jalapenos, green onion, cilantro, lemon juice, lime juice, salt, pepper, 2 cloves of fresh garlic, and sprinkle of cumin!
In my Kitchen Aid Mixer I mixed a large can of Refried Beans, a package of Taco Seasoning, and some cooked Beef Chorizo.
Cook Chorizo on the stove top, drain the grease, mix with beans and taco seasoning.
I spread the bean mixture out into a large casserole dish.
In the Kitchen Aid Mixer I mixed a package of Philly Cream Cheese and a cup of sour cream.
I then added chopped cilantro, green onion, and a few sprinkles of salt, and some fresh squeezed lemon.
I spread the mixture right over the bean, chorizo, and taco seasoning mixture.
Now it's time to make guacamole! ;)
I mashed together six avocados.
I then added: green onion, cilantro, jalapeno, lemon juice, lime juice, 2 cloves of chopped garlic, salt and pepper, and a 1/2 cup of sour cream.
I mixed it altogether and spread it over the cream cheese and sour cream mixture.
The next step is to spread the fresh salsa over the top of the guacamole.
Almost ready to eat!
Top with shredded cheese, and olives!
Bake at 350 degrees for 20 -30 minutes until cheese is slightly browned. This dish may be eaten HOT or COLD and is great both ways!
