Today, I’m sharing with you one of my favorite plates: Spaghetti with sauteed vegetables and goat cheese medallions. It’s super easy, healthy and it will take you less than 20 minutes! Hoy comparto con vosotras una de mis recetas favoritas de pasta: Spaghetti con verduras y queso de cabra. ¡Es una receta sencilla, sana y muy rápida! Además, podéis añadir trozos de pollo o tiras de ternera y así resulta un plato 100% completo ;)
INGREDIENTS:
– 400g of pasta
– 2 eggs
– 400g of vegetables (zucchini, onions, peppers, leek …)
– Peeled walnuts
– Medallions of goat cheese
– Olive oil
– Salt / Garlic / Paprika

PROCEDURE:
1. Put some water in a medium size pot, add two eggs and let them boil.
2. Cut all the vegetables
3. Saute the vegetables in a pan and add oil, salt and garlic
4. Remove the eggs from the water once they are boiled
5. Add salt to the boiling water and the pasta
6. Cook the pasta for 8-10 minutes
7. Saute vegetables until they are roasted and tender
8. Chop the walnuts and the boiled eggs
9. Remove the pasta from the water once it’s cooked and add some olive oil
10. Put the pasta in a bowl leaving a whole in the middle where to put the vegetables
11. Put the medallions of goat cheese over the hot vegetables
12. Sprinkle the chopped walnuts and the eggs
12. Drizzle with olive oil and paprika

TIPS:
I always opt for whole wheat pasta, but you can use your favorite: macaroni, gnocchi, egg pasta… As for the vegetables, don’t get crazy! I usually use the ones I have at the fridge: onions, zucchini, green pepper, red pepper… But the options are endless! Any kind of vegetable will work and if you usually don’t have vegetables, I recommend you to buy that mix of vegetables ready to saute! This way the recipe will be even faster ;)
Of course, you can change the type of cheese and opt for gorgonzola, parmesan flakes, camembert or brie cheese. The only thing I would suggest to consider is to pick a cheese with not a strong flavor and that it melts for creamy pasta taste.
•VARIATIONS• If you liked the recipe, another variant I’ve tried and it is so tasted as well is to saute the vegetables with curry and add the cooked spaghetti into the pan. Once we are ready to serve, instead of goat cheese, add a tablespoon of cream light cheese and sprinkle the plate with spicy oil.

- Sal / Ajo / Pimentón dulce

CONSEJOS:
Yo siempre que puedo opto por pasta integral, aunque podéis usar la que más os guste: macarrones, gnocchi, pasta al huevo… En cuanto a las verduras, suelo usar la que tengo por casa: cebolla, calabacín, pimiento verde, pimiento rojo… Aunque cualquier verdura que tengáis sirve y si tenéis prisa o no soléis tenéis verduras en casa, os recomiendo las bolsas de verduras listas para saltear, así resulta todavía más rápida ;)
Por supuesto, podéis cambiar el tipo de queso y optar por gorgonzola, parmesano en escamas, camembert o queso brie. Lo único que os recomiendo tener en cuenta es que sea un queso que no tenga un sabor demasiado fuerte (para que no enmascare los sabores) y que se derrita para que de mayor cremosidad a la pasta.
•VARIANTES• Si os ha gustado la receta, otra variante que he probado y también queda muy rica es saltear las verduras con curry y añadir los spaghetti cocidos, y a la hora de emplatar, en vez de queso de cabra, añadimos una cucharada sopera de queso blanco de untar light (tipo Philadelphia) y rociamos el plato con aceite picante.
