Christmas Morning Chocolate Peppermint Crepes



Christmas morning is a time for indulgence – these chocolate peppermint crepes are amazing with a fresh cup of coffee and some fruit. Although crepes may seem complicated, that's not so! Give this festive dish a try.

Tip: you can finish your crepes by rolling them or folding into triangles.

Serves 4

Ingredients
  • 1 egg
  • 1/2 cup milk or milk substitute
  • 1/3 cup flour
  • 1/4 tsp vanilla extract
  • pinch of salt
  • 1 cup vanilla yogurt
  • Peppermint extract
  • Chocolate chips for melting
  • Powdered sugar
Directions

Combine egg, flour, vanilla, milk, and salt in a small mixing bowl.

Heat a lightly-greased pan on medium heat. Slowly pour 1/4 batter at a time to make one crepe. Spread the batter thin. Flip after about 1 minute & remove after another minute. Repeat 3 more times.

Mix yogurt & ¼ tsp peppermint extract. Fill each crepe with ¼ of mixture. Melt chocolate ½ tsp peppermint extract in microwave, and drizzle on crepes. Dust with powdered sugar and serve warm.
